  • 4 medium zucchinis spiralized
  • 1 tablespoon olive oil

  • ¼ cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil

For the Marinara Sauce:

  • 2 cups marinara sauce store-bought or homemade

Instructions
 

  • Preheat the Oven: Preheat the oven to 375°F (190°C) for the meatballs.
  • Prepare the Meatballs: In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, egg, minced garlic, oregano, basil, salt, and pepper. Mix until fully combined. Form the mixture into small meatballs (about 1-2 inches in diameter) and place them on a baking sheet lined with parchment paper.
  • Bake the Meatballs: Bake the meatballs for 15-20 minutes or until cooked through (internal temperature should reach 165°F or 75°C).
  • Cook the Zucchini Noodles: While the meatballs are baking, heat olive oil in a large pan over medium heat. Add the spiralized zucchini and sauté for 3-4 minutes until just tender. Season with salt and pepper to taste.
  • Prepare the Marinara Sauce: In a small saucepan, heat the marinara sauce over low heat. Add the cooked meatballs to the sauce and simmer for 5 minutes to allow the flavors to meld.
  • Assemble the Dish: Divide the zucchini noodles among four plates. Top with turkey meatballs and marinara sauce. Garnish with extra Parmesan cheese or fresh basil if desired.
