Ingredients
  

Fluffy Sourdough Discard Pancakes

  • 1 cup sourdough discard
  • 1 cup all-purpose flour
  • 1 egg
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • A pinch of salt

Savory Sourdough Discard Muffins

  • 1 cup sourdough discard
  • 1 cup whole wheat flour
  • 2 eggs
  • ½ cup shredded cheese cheddar or Parmesan
  • 1 teaspoon baking soda
  • 1 tablespoon chopped herbs rosemary, thyme, or parsley

Instructions
 

Prepare the Batter:

  • In a bowl, mix 1 cup of sourdough discard with 1 cup of milk, 1 egg, 2 tablespoons of melted butter, and 1 tablespoon of sugar. Stir until combined.

Add Dry Ingredients:

  • In a separate bowl, whisk together 1 cup of flour, 1 teaspoon of baking powder, and a pinch of salt. Gradually mix the dry ingredients into the wet ingredients until smooth.

Cook the Pancakes:

  • Heat a non-stick griddle or frying pan over medium heat. Lightly grease with butter or oil. Pour about 1/4 cup of batter onto the griddle for each pancake. Cook for 2-3 minutes on each side, or until golden brown.

Serve:

  • Serve your sourdough discard pancakes warm with your favorite toppings such as maple syrup, fresh fruit, or whipped cream.
