Ingredients
  

Main Ingredients:

  • 2 lbs beef brisket chuck roast, or ground beef
  • 2 tbsp Meat Church BBQ rub
  • 1 tbsp olive oil
  • 1 medium onion diced
  • 4 cloves garlic minced
  • 1 red bell pepper chopped
  • 2 jalapeños diced (optional for heat)
  • 1 can 14.5 oz fire-roasted diced tomatoes
  • 1 can 15 oz tomato sauce
  • 2 tbsp tomato paste
  • 1 cup beef broth or beer
  • 1 tbsp Worcestershire sauce
  • 1 can 15 oz kidney beans or black beans (optional)

Spices & Seasonings:

  • 1 tbsp smoked paprika
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp ground coriander
  • ½ tsp cayenne pepper adjust for spice level
  • Salt and black pepper to taste

Optional Toppings:

  • Shredded cheddar cheese
  • Sour cream
  • Fresh cilantro
  • Sliced jalapeños
  • Crushed tortilla chips

Instructions
 

Step 1: Prepare the Meat

  • Trim excess fat from the beef and cut it into small chunks (if using whole cuts).
  • Season generously with Meat Church BBQ rub and let it sit for 15-20 minutes.

Step 2: Sauté Aromatics

  • Heat olive oil in a large pot over medium heat.
  • Add diced onions, garlic, and bell peppers. Sauté until softened, about 5 minutes.

Step 3: Brown the Meat

  • Add the seasoned beef to the pot and brown on all sides, about 5-7 minutes.
  • Stir in tomato paste and cook for another 1-2 minutes to enhance the flavor.

Step 4: Build the Chili Base

  • Pour in fire-roasted tomatoes, tomato sauce, beef broth (or beer), and Worcestershire sauce.
  • Add all spices, stirring well to combine.

Step 5: Slow Cook for Deep Flavor

  • Reduce heat to low and let the chili simmer for 2-3 hours, stirring occasionally.
  • If using beans, add them in the last 30 minutes.
