- 1 cup leftover taco meat beef, turkey, or plant-based
- 4 large eggs
- 1 cup shredded cheddar cheese or your favorite blend
- ¼ cup salsa mild, medium, or spicy
- 1 avocado optional, for topping
- ¼ cup chopped cilantro optional, for topping
- Salt and pepper to taste
Warm the tortillas: Heat the flour tortillas in a skillet over medium heat for 30 seconds per side, until soft and warm. Set aside.
Reheat the taco meat: In a large pan over medium heat, reheat the leftover taco meat until warmed through, about 2–3 minutes. Set aside.
Prepare the scrambled eggs: In a bowl, whisk together eggs, a pinch of salt, and pepper. In the same skillet, scramble the eggs over medium heat until cooked through and fluffy.
