Ingredients
  

Frozen Diced Carrots

  • 2 cups frozen diced carrots

Vegetables

  • 2 medium potatoes diced
  • 1 medium onion chopped
  • 1 tbsp olive oil

Seasoning

  • to taste salt
  • to taste pepper
  • 1 tsp paprika

Protein and Additions

  • 1 cup red lentils
  • 4 cups vegetable broth
  • 1 tbsp sesame oil

Instructions
 

  • Heat olive oil in a skillet over medium heat. Add chopped onion and sauté until softened.
  • Add diced potatoes and cook for about 10 minutes until softened.
  • Stir in the frozen diced carrots and season with salt, pepper, and paprika. Cook until vegetables are golden and tender.
  • For creamy carrot and lentil soup, combine lentils, frozen carrots, and vegetable broth in a pot. Bring to a boil, then reduce heat and simmer for 20 minutes. Use an immersion blender to blend until smooth, and stir in coconut milk and cumin.
  • For carrot stir-fry, heat sesame oil in a wok, add garlic and sauté for 1 minute. Add frozen diced carrots and snap peas and stir-fry for 5-7 minutes, then drizzle with soy sauce.
