Prepare the Bones: Blanch the bones by boiling them for 10 minutes to remove impurities. Optionally, roast the bones at 400°F for 30-45 minutes for a richer flavor.
Combine Ingredients: Add the bones, vegetables, vinegar, and seasonings to a large pot (or slow cooker/Instant Pot). Fill with water, leaving space at the top.
Simmer:
Stovetop: Bring to a boil, then simmer for 12-24 hours. Skim impurities periodically.
Slow Cooker: Set to low and cook for 12-24 hours.
Instant Pot: Cook on high pressure for 2 hours and let it naturally release.
Strain & Store: Use a fine-mesh strainer or cheesecloth to separate the solids from the broth. Store the broth in airtight containers in the fridge (up to 5 days) or freeze (up to 6 months).
