Ingredients
  

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking soda
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 2 large eggs
  • 2 cups buttermilk
  • ¼ cup melted butter plus more for cooking
  • 1 teaspoon vanilla extract

Instructions
 

  • 1️⃣ Prepare the Batter: In a large bowl, whisk together the flour, sugar, baking soda, baking powder, and salt.
  • 2️⃣ Mix Wet Ingredients: In a separate bowl, beat the eggs and add buttermilk, melted butter, and vanilla extract. Stir until combined.
  • 3️⃣ Combine: Gradually mix the wet ingredients into the dry ingredients, stirring gently until just combined. Do not overmix – a few lumps are okay!
  • 4️⃣ Heat the Pan: Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter.
  • 5️⃣ Cook the Pancakes: Pour ¼ cup of batter onto the pan for each pancake. Cook until bubbles form on the surface (about 2 minutes), then flip and cook for another 1-2 minutes until golden brown.
  • 6️⃣ Serve: Stack the pancakes and serve warm with maple syrup, fresh fruit, or your favorite toppings!
