Churro cheesecake is a delicious fusion of two iconic treats, offering the smooth richness of cheesecake combined with the crispy, cinnamon-sugar flavor of churros.
Preheat the oven to 325°F (163°C). Combine graham cracker crumbs, melted butter, sugar, and cinnamon in a bowl. Press mixture into the bottom of a springform pan and bake for 10 minutes. Set aside.
In a large bowl, beat softened cream cheese with granulated sugar until smooth. Add eggs one at a time, mixing fully after each addition. Stir in vanilla extract and sour cream. Mix until smooth and combined.
Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top evenly.
Bake in preheated oven for 50-60 minutes or until the center is set but slightly wobbly. Allow to cool to room temperature, then refrigerate for at least 4 hours.
Once chilled, mix sugar and cinnamon for the topping. Sprinkle over the cheesecake generously.
