Ingredients
  

  • 2 large chicken breasts cooked and shredded
  • ¼ cup buffalo sauce
  • 4 cups mixed greens e.g., spinach, arugula, lettuce
  • 1 cup cherry tomatoes halved
  • ½ cucumber sliced
  • ¼ red onion thinly sliced
  • ¼ cup shredded carrots
  • ½ avocado diced
  • ¼ cup blue cheese crumbles optional
  • 2 tablespoons ranch or blue cheese dressing or your favorite dressing

Instructions
 

Cook the Chicken:

  • In a skillet, cook the chicken breasts over medium heat until fully cooked (about 7-8 minutes per side). Once cooked, shred the chicken using two forks.

Toss in Buffalo Sauce:

  • Add the shredded chicken to a bowl and pour the buffalo sauce over it. Toss until the chicken is evenly coated.

Prepare the Salad Base:

  • In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and shredded carrots.

Assemble the Salad:

  • Add the buffalo chicken on top of the salad base. Then, scatter the diced avocado and blue cheese crumbles (if using) over the salad.

Dress and Serve:
