Instructions
Wash, peel, and dice the potatoes into small, even cubes. Dice the onion and mince the garlic.
In a large pot, melt butter over medium heat. Add diced onion and minced garlic. Sauté until the onion becomes soft and fragrant, about 5 minutes.
Add the diced potatoes to the pot, stirring to coat them in the buttery onion mixture. Pour in the broth and bring the mixture to a boil.
